I’m sure you’ve seen pizookies all over the internet. It’s basically a giant cookie that looks and it’s eaten like a pizza. If you’re like me and love cookies and pizza, you will find that making cookies look like pizza is just…good ol’ fun!!!!
This pizza looks like it belongs to my daughter’s Candyland game! What’s amazing is that it tastes super delicious and is not extremely sweet at all.
For this recipe you will need:
- 2 cups all purpose flour
- 2/3 cup of unsalted butter
- 2/3 cups sugar
- 1 egg
- 1 ½ tsp baking powder
- 1/2 almond extract
- 1/2 tsp vanilla
- pink buttercream
- colored buttercream in 2-3 colors
- spice gumdrops in different colors
- rainbow sour belts
- sugar and sprinkles in different colors
- giant round cookie baking sheet (from local baking supply store)
To make the pizookie:
Preheat the oven to 350%. Cream butter and sugar for about 3 minutes or until smooth. Add extracts and egg. In a separate bowl combine baking powder and flour. Slowly add dry ingredients to wet ingredients. Mix for a few more minutes until the dough is stiff. Finish kneading the dough by hand. Place a piece of parchment paper on the cookie pan. Spread your cookie dough along the pan all the way to the edges. If you have a small roller you can smooth it out with it, if not, use your hands. Make sure the cookie is as even as possible. With a pizza cutter, pastry cutter or knife cut it like a pizza in eight slices.
Bake for 10 minutes until it’s slightly golden on top. It has to be under-baked so that you can slice it without cracking when is done. Cool in rack for 15 minutes. It will be about 1/8 inch thick.
To decorate the pizookie:
Spread pink buttercream in the middle of the cookie leaving out the edge. To get the rainbow effect on the piped edge, fill pastry bags with each buttercream color, cut off the end, and put all three pastry bags inside one big bag with the tip. You can also use three zip lock bags inside a pastry bag. Pipe two rows around the edge. Since the tip I used was small, I alternated 2 colors at a time instead of 3 colors at once. With kitchen scissors cut out tiny hearts from the sour belts.
Slice your gumdrops to look like pepperoni slices. Decorate the cookie with gumdrop slices, hearts, candy beads, sprinkle and sugar. Wait 5 minutes for the buttercream to set, and carefully with the pizza cutter, cut off the cookie slices.
Think of all the themes and possible candy combinations you can make! You will love the unexpected combination of spice and sour candy, the delicious buttercream and almond flavored cookie. This is the perfect dessert for pizza night! Yum!
